Sweet Rice Ball / 경단

This is very easy to make. this rice ball is light and fluffy unlike other traditional Korean rice cake.
 But traditional coating is time consuming, I made easier way to coating. This is good with afternoon tea or coffee, herbal tea, instead of cup cake or a slice of cake.

For the rice ball: Sticky rice powder( 450g). hot water. a pinch of sea salt.

For Coating; Ground almond. Cocoa powder. Cinnamon powder. Black sesame seed( toasted). Sugar.

Method: 1. In a large bowl put rice powder add boiled hot water slowly and pinch of salt
, mix with wooden spoon until like a sticky  dough . put dry rice powder on your hand and take out 1small dough( 2tesp) and roll on your palm to make small ball.
Leave on a dry rice powdered plate .
2. in a separate bowl put all the coating ingredients , mix with sugar as your taste and set aside.
3.Boil the water in a large pan and put rice ball and when balls are float on the top take out and put in the coating bowl , roll ,coat evenly .

I love black sesame coating.

Mini Pancake Wrap / 구절판

This dish means 8 different cooked vegetables and meat dish wrapped in the mini pancake to serve in a wooden box with 9 compartments ,good  with drinks specially when you have a party but it is too many, make 3-4 different veggies and a meat dish would be  good as a starter with mustard sauce.

1red pepper.  3-6 asparagus top. 2-3 dried oak mushroom.  20g braising steak.

Method: thinly slice pepper and set aside, soak mushroom in the warm water for 30 minutes and discard stock, thinly cut as pepper, quick blanch asparagus in the boiling water and put in the ice cold water , cut same length as pepper. cut steak meat thinly ,5cmlength and marinate in 1 tbsp soy sauce, 2tsp apple juice, 1/2 tsp chopped garlic, 2tsp sugar 2tsp sesame oil, ground black pepper, leave for 30 minutes. 
heat frying pan with little rapeseed oil, cook gently pepper season with salt and pepper , then asparagus, mushroom, and steak strips. put  in a plate separately ,leave space in the middle for pancake.
Make pancake; sieve plain flour,1cup and 1 egg ,a pinch of salt slowly pour milk and stir with fork , when mixture is ready like English pancake, fry mini pancake, 10cm diameters. make 10-15 .
Mustard Sauce; 2 tbsp Dijon mustard, 3-4 tsp white vinegar, 2tbsp honey, mix all together.
warp vegetable 3slice each and meat and serve with mustard sauce. It is very light and pretty first course.   
Tip: can be serve with thinly sliced quick pickled daikon. ( in a bowl,pour 1cup water 3tbsp withe vinegar, 2tsp sugar, leave for 15 minutes and squeeze water and serve)
